Hakka noodles:

Ingredients

Rice noodles ½ packet no. 1
Chicken boiled and cubed ½ cup
Prawns 8 to 10 boiled
Ginger chopped 1 tbsp
Green chilies finely chopped 1 tbsp
Spring onions finely chopped ½ cup
Carrot chopped ½ cup
Cabbage chopped ½ cup
Capsicum chopped ½ cup
Beat sprout ½ cup
Black pepper ½ tsp
Soya sauce 2 tbsp
Oyster sauce 2 tbsp
Chili garlic sauce 2 tbsp
Sweet chili sauce 2 tbsp

Method

Soak noodles for 30 mins, drain water, keep aside. Heat ¼ cup oil in a wok, add ginger, green chilies, fry slightly, add the boiled prawns, chicken and vegetables, cook on high flame for 2 mins, add the noodles with all the seasonings, fry, mix well for 5mins, garnish with thin long pieces of spring onions. Serve immediately.

Mumbai chili chicken:

Ingredients

Boneless chicken cubes ½ kg
Oil as required
Salt 1 tsp
Black pepper powder ½ tsp
sugar 1 tsp
Soya sauce 2 tbsp
Corn flour 2 tbsp heaped
Garlic 1 tbsp chopped
Egg 1
Green chilies 8
Spring onion leaves as required thinly sliced
White pepper ¼ tsp
Green chilies to garnish

Method

Marinate the boneless chicken pieces in soya sauce, salt, egg, corn flour for 10 mins, deep fry chicken and hot oil light brown. Heat ¼ cup oil in a wok, add chopped garlic, green chilies, toss for 15 secs, add 2 cups of water, when boiling add sugar, pepper, salt, and soya sauce, add fried chicken pieces, cook for 3 mins, add the dissolved corn flour stirring, garnish with chopped spring onion and green chilies julienne.

Shanghai fried rice:

Ingredients

Boiled rice 2 cups heaped+
Rice noodles soaked 1 cup
Ginger finely chopped 1 tsp
Garlic finely chopped 1tsp
Spring onion finely chopped ¼ cup
Cabbage finely chopped ¼ cup
Carrot finely chopped ¼ cup
Capsicum finely chopped ¼ cup
Crushed red pepper 1 tsp
Sugar 1 tsp
Soya sauce 2tbsp
Siracha sauce 1 tbsp

Method

Heat oil, fry the ginger garlic and green chilies in a wok, add the vegetables, crush red pepper, salt, sugar, add the soaked noodles, rice, spring onion, soya sauce, siracha sauce, mix well, remove from heat and serve immediately
