Apple Jalebi :
Ingredients:
Instant yeast 1/2 tsp
flour 1 cup
sugar 1 tsp
Food color as required
Clarified butter 1 tbsp
gram flour 1 tbsp
Oil or Clarified butter for frying
Water as required
For Syrup:
water 1 cup
sugar 2 cups
lemon juice 2 tsp
green cardamoms 3-4
apples 2-3
Ice cream for serving ( optional)
Procedure
In a pot make syrup by boiling water sugar and cardamom together add lemon juice when its ready.
Now in a bowl add yeast with 2 tbsp Luke warm water and sugar and let it sit for 15 minutes.
In another bowl add all the ingredients then add yeast mixture and make a paste (pourable). Now cut apple into rings neither so thick nor thin. Dip these rings into batter and deep fry on medium heat till crisp. Take them out of the oil and put them in sugar syrup right away. Let them sit in sugar syrup for 2 minutes and serve. Serve it with vanilla ice cream.
Green Chicken Roulade:
Ingredients
Chicken breast 500 gm
black pepper 1/2 tsp
Red chili flakes 1/2 tsp
Oil 2 tsp
Spinach chopped 2 cup
Coriander 1/2 cup
Salt to taste
black pepper 1/2 tsp
Red chili flakes 1/2 tsp
Garlic powder 1/2 tsp
Onion powder 1/2 tsp
Fennel seeds 1 tsp
Oregano 1 tsp
Cheddar cheese 1/2 cup
Flour 2 tbsp
Butter 2 tbsp
Milk 1/2 cup
Cream 1/2 cup
Salt to taste
Procedure
In a bowl marinate chicken breast with salt pepper and chili flakes.
In pan heat 2 tsp oil add spinach coriander with all the spices and oregano and let it cook on medium flame and allow spinach to cook, when it cooked turn off the flame and add cheddar cheese. Let it cool down a little
Meanwhile cut chicken fillet into butterfly.
Tenderize it with a hammer or any flat surface pan. Spread the mixture roll it and keep it aside.
In pan heat oil add chicken roulade and let it cook on low medium heat.
In another pan heat butter add flour cook it for a few minutes then add milk in it and cook, blend the remaining spinach mixture with cream, then add it sauce. Cook if for a while add salt if needed and turn off the flame.
In a platter spread sauce then place sliced roulade on top, garnish with fresh coriander.
Lime Cauliflower Bites:
Ingredients:
Cauliflower 1
Salt 1 tsp
Black pepper 1/2 tsp
Red chili powder 1/2 tsp
Red chili flakes 1/2 tsp
Garlic powder 1/2 tsp
Onion powder 1/2 tsp
Butter milk 1 cup
Flour 2 cups
Oil for fry
Ginger garlic paste 1 tbsp
Lime leaves 9-10
Lemon juice 1 tbsp
Soya sauce 2 tbsp
Chopped spring onions 2-3 tbsp
Sesame seeds 1 tsp
Lemon slices for garnish
Procedure:
Cut cauliflower into pieces.
In a bowl add butter milk with salt and all the spices add cauliflower mix it well keep if aside.
Now coat it with flour, dust all the excess flour and deep fry cauliflower pieces on med heat till golden in color.
In a pan heat 2 3 tbsp oil, add ginger garlic paste, cook it for a few minutes then add lime leaves and on low flame. Now add soya sauce lime juice and cook it well. Now add fried cauliflower toss it well and serve. Garnish with spring onion and sesame seeds.
Savoury Garlic Muffins:
Ingredients
Flour 250 gm
Baking powder 1-1/2 tsp
Soda 1/2 tsp
Salt 1/2 tsp
Egg whisked 1
Milk 1 cup
Sour cream 3 tbsp
Vegetable oil 4 tbsp
Garlic crushed 4 cloves
Salted butter 90 gm
Mozzarella cheese 1/2 cup
INSTRUCTIONS
Preheat oven to 180C
Grease a 12 hole standard muffin tin with melted butter
Place butter and half the garlic in a pan and melt on a gentle heat. Once off the heat, keep warm.
Sift together the plain flour, bicarb soda, baking powder and salt, then add the oil, milk, egg and sour cream. Gently mix.
Fill each hole with some batter, it should come roughly 1/3 of the hole up. Put 2-3 cubes of cheese in the mould, then 1/2 a tsp of the garlic butter.
Repeat for all the muffins, then fill them with more batter and another 1/2 tsp of garlic butter.
Bake for 20 – 25 minutes. They should be golden on top and spring back.
