Crunchy and delicious chiwda made healthy to gorge without any guilt.
HEALTHY CHIWDA
Ingredients
8-10 walnuts, broken
12-15 almonds
¾ cup cornflakes
¾ cup puffed wheat
1 cup lotus seeds (makhana)
1 cup puffed rice
1 tbsp oil
1 tsp mustard seeds
7-8 curry leaves
2-3 green chillies, slit
1 tbsp chopped coriander
¼ tsp turmeric powder
Salt to taste
½ tsp sugar
Method
1. Heat a deep non-stick pan, add walnuts, almonds and dry roast till lightly toasted. Transfer in a bowl.
2. In the same pan lightly roast cornflakes for 2-3 minutes, set aside. Then similarly lightly roast puffed wheat, makhana and puffed rice, separately and set aside.
3. Heat oil in a non-stick pan, add mustard seeds, curry leaves, green chillies, coriander and turmeric powder. Sauté on medium heat for a minute.
4. Add roasted mixture, salt and sugar. Mix well. Cook on medium heat for 5-6 minutes, stirring occasionally. Allow to cool down.
5. Serve or store in an airtight container.
