Delicious khichdi with the punchy essence of garlic.
GREEN GARLIC KHICHADI
Ingredients
½ cup chopped green garlic
1 cup rice, soaked and drained
¾ cup split green gram with skin (chilkewali moong dal) soaked and drained
A pinch of asafoetida
½ tsp turmeric powder
3 tbsps ghee+ drizzling
A pinch of red chilli powder
Salt to taste
Sprig of coriander for garnish
Method
1. Heat a non-stick pressure cooker, add rice,moong dal, asafoetida, turmeric powder, 3 ½ cups water and cook it on medium heat till 5 whistles are released.
2. Once the pressure is released completely, open the lid of the pressure cooker and mash the cooked rice and moong dal with the back of the spoon. Add sufficient water to adjust the consistency and mix well. Cook for 30 seconds and take it off the heat.
3. Heat ghee in a non-stick pan, add green garlic and mix well. Sauté for 2-3 minutes.
4. Add a pinch of red chilli powder, mix well. Add the cooked mixture, mix well and add salt, 1 ½ cups water and mix well. Cook for 2 minutes.
5. Transfer to a serving bowl, drizzle some ghee and garnish with sprig of coriander, serve hot.
