Gobi Vatana Subzi

This recipe unleashes the full potential of common spice powders that are available in every kitchen. Watch how simple ingredients work together to transform cauliflower and green peas into a mouth-watering subzi that will make a simple meal of rotis and rice seem very special!
Serve the Cauliflower Vatana nu Shaak hot and fresh, to enjoy the nice juicy textures of the veggies and the peppy aromas of the spice powders.

Preparation Time: 10 minutes.
Cooking Time: 8 minutes.
Serves 3.

3 cups cauliflower florets
1 cup green peas
2 tbsp oil
1 tsp cumin seeds (jeera)
¼ tsp asafoetida (hing)
¼ tsp turmeric powder (haldi)
Salt to taste
1 tsp chilli powder
2 tsp coriander-cumin seeds (dhania-jeera) powder
2 tbsp chopped coriander (dhania)

1. Heat the oil in a deep non-stick kadhai and add the cumin seeds and asafoetida.
2. When the seeds crackle, add the turmeric powder, cauliflower, green peas and salt, mix well and cover with a lid and cook on a medium flame for 5 minutes, while stirring occasionally.
3. Add the chilli powder, coriander-cumin seeds powder and coriander, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
Serve hot.
