Popular recipe of batter fried fish fillets served with cooked peas and tartare sauce.
FISH ‘N CHIPS
Ingredients
250 grams boneless fish, cut into large pieces
French fries for serving
Salt to taste
Crushed black peppercorns to taste
½ cup cornflour
1 tablespoon oil + for deep-frying
1 medium onion, chopped
¼ cup green peas, blanched
3 tablespoons fresh cream
½ cup refined flour (maida)
Fish stock as required
½ tablespoon chopped fresh mint leaves
Method
1. Put fish pieces on a plate. Sprinkle salt and crushed peppercorns on top and rub well. Set aside to marinate for 10-15 minutes.
2. Mix together ¼ cup cornflour, salt and crushed peppercorns in a bowl and set aside.
3. Heat 1 tablespoon oil in a non-stick pan. Add onions and sauté till lightly browned.
4. Add green peas, salt and crushed peppercorns, mix well and cook for 2 minutes. Mash lightly.
5. Add cream, mix well and cook for a minute. Remove from heat and set aside.
6. Whisk together remaining cornflour, refined flour, crushed peppercorns, salt and fish stock as required to make a thick batter.
7. Heat sufficient oil in a kadai.
8. Coat fish pieces with the flour mixture, dip in batter and deep-fry in hot oil till browned. Drain on absorbent paper.
9. Add mint leaves to cooked peas and mix well. Transfer in a serving bowl.
10. Put fried fish pieces with French fries on a serving platter. Serve hot alongwith cooked peas, tartare sauce and lemon wedges.
