Experience the flavours of a classic Highway Dhaba with this Urad Dal recipe.

DHABA STYLE URAD DAL

Ingredients

1½ Tata Sampann Urad Dal
Salt to taste
1 tsp turmeric powder
2 tbsps mustard oil
1 tsp cumin seeds
2 dried red chillies
1 inch ginger, finely chopped
1½ tbsps finely chopped garlic
2-3 green chillies, chopped
½ tsp asafoetida
1 large onion, finely chopped
1 large tomato, finely chopped
½ tsp red chilli powder
½ lemon
2 tbsps freshly chopped coriander leaves
1 tbsp ghee + for drizzling

Method

1. In a bowl, add Tata Sampann Urad Dal and add sufficient water. Soak it for 4-5 hours.
2. Heat a non-stick deep pan, add soaked urad dal, salt, turmeric powder and sufficient water. Mix well, cover and cook till the dal is cooked completely but the lentil grains intact.
3. Heat mustard oil in a kadai, let it smoke. Add cumin seeds and let the colour change.
4. Add dried red chillies, ginger, garlic, and sauté for a few seconds. Add green chillies and mix well.
5. Add asafoetida and mix well. Cook for a few seconds.
6. Add onion and sauté till golden brown. Add tomato, mix well and add salt. Sauté well and cook till the mixture is pulpy.
7. Add red chilli powder and mix well. Cook for 1 minute.
8. Add the cooked dal and mix till well combined. Squeeze lemon and add chopped coriander and mix well.
9. Add ghee and mix well. Cook for 1 minute and take it off the heat. Transfer to a serving bowl.
10. Drizzle ghee and serve hot.
