Cottage cheese dip:

Ingredients

Cottage cheese 1 cup
Olive oil 2tbsp
Garlic minced 2 cloves
Black and green olives few
Capsicum chopped 1
Salt to taste
Cayenne pepper to taste
Method :
Roast the capsicum in olive oil either in a wok or in the oven. Sprinkle a pinch of salt and stir fry until the capsicum has softened. Combine the drained and mashed cottage cheese, roasted capsicum, 1 more tablespoon olive oil along with all the other ingredients. Check seasonings. Add the olives. Mix and chill. Can be used as a dip or even as a spread for sandwiches.

Cheese balls:

Ingredients

Potato boiled 1
Grated cheese ½ cup
Capsicum 1
Ginger garlic paste ¼ tsp
Dried oregano 1tsp
Red chili flakes ¾ tsp
Black pepper powder ½ tsp
Corn flour 1tbsp
Flour 2tbsp
Water 1-1/2 tbsp
Bread crumbs 1 cup
Coriander as required
Salt ½ tsp
Oil as required

Method :
Mix grated cheese with boiled and mashed potato, capsicum, coriander leaves, red chili flakes, crushed oregano, pepper, ginger garlic paste, cornflour and salt. Apply little oil on your palms and start making little balls from the mixture. In a bowl, add flour and water and mix. In a plate put some flour and breadcrumbs. Roll the cheese balls in the plain flour, dip them in the flour batter and then roll them in the bread crumbs. Deep fry cheese balls in hot oil till they turn golden brown.
