Delicious chicken preparation influenced with the spiciness of black pepper.
CHICKEN KALIMIRCH
Ingredients
4 chicken drumsticks
1 tsp crushed black peppercorns + garnish
2 tbsps ghee
1 black cardamom
2 green cardamoms
1 inch cinnamon
3 cloves
1 cup boiled onion paste
2 tsps green chilli paste
½ cup yogurt
¾ cup grated mawa
1 tbsp kaju-magaz paste
Salt to taste
A pinch of green cardamom powder
¼ tsp dried fenugreek powder
2 tbsps fresh cream + garnish
½ tsp chaat masala
½ tsp white pepper powder
Ginger strips for garnish
Method
1. Heatghee in a non-stick pan, add black cardamom, green cardamom, cinnamon, cloves, onion paste, mix well. Cook for 2 minutes.
2. Add green chilli paste, mix well. Add chicken and sear on high heat for 2-3 minutes. Add yogurt and mix well. Cook for 2 minutes.
3. Add 1 ½ cups water and mix well. Cover and cook till the chicken is ¾ cooked.
4. Add mawa, kaju-magaz paste, salt, green cardamom powder, dried fenugreek powder, mix well.
5. Add crushed black peppercorns, mix well. Add ½ cup water, cover and cook till chicken is completely cooked.
6. Add fresh cream, chaat masala, white pepper powder, and mix well.
7. Transfer to a serving bowl, garnish with ginger strips, fresh cream, and crushed black peppercorns, and serve hot.
