Carmen’s signature dish at La Cocina de Carmen was a modern twist on the classic Colombian dish, “ajiaco.” Ajiaco is a hearty soup made with chicken, potatoes, corn, and other vegetables. Carmen’s version of the dish included a variety of exotic ingredients, such as quinoa, avocado, and a special chili sauce. In 2005, Carmen was invited to participate in the “International Gastronomic Fair” in Madrid, Spain.
