This Cheese Crusted Chicken Salad is a delicious recipe which is healthy as well. A sparkling salad with tender chicken and cheese, though seemingly simple, the dressing creates magic when combined with the other ingredients.

CHEESE CRUSTED CHICKEN WITH SALAD

Ingredients

4 tbsps grated processed cheese
2 boneless chicken breasts
2 tbsps mayonnaise
2 garlic cloves
Oil for greasing
Salad
8-9 button mushrooms
7-8 fresh parsley sprigs
8-10 fresh coriander sprigs
Juice of 1 lemon
Salt to taste
1 tbsp green chilli sauce
6-7 mixed salad leaves (Iceberg lettuce, lollo rosso lettuce)
Crushed black peppercorns to taste
2 tbsps extra virgin olive oil

Method

1. Preheat oven at 180ºC.
2. To make salad, slice mushrooms and place in a bowl.
3. Roughly chop parsley sprigs and add. Roughly chop coriander sprigs and add alongwith lemon juice, salt and chilli sauce and mix well. Refrigerate till chilled.
4. Make incisions on chicken breasts and spread 1 tbsp mayonnaise on each.
5. Roughly chop garlic cloves and divide equally onto each breast.
6. Grease a baking dish with oil and place chicken breasts on it. Top each with 2 tbsps cheese, press lightly, put the dish in the preheated oven and bake for 20-25 minutes.
7. Tear salad leaves and add to the chilled salad bowl. Toss well. Add crushed peppercorns and olive oil and toss again.
8. Prepare a bed of salad on a serving dish. Put the chicken on top and serve immediately.
