Chicken pieces cooked in caramalized pepper flavoured sauce.
CARAMELIZED PEPPER CHICKEN
Ingredients
2 tbsps brown sugar
2½ tsps black pepper powder
400 gms chicken legs (drumsticks and thigh)
1 tsp oil
2 garlic cloves
1 tsp dark soy sauce
1 tbsp orange zest + for garnishing
Salt to taste
2 spring onion with greens, sliced
2 tsps five spice powder
Juice of 1 orange
1 tbsp orange marmalade
½ tsp vinegar
Method
1. Heat oil in a non-stick pan. Crush garlic cloves and add alongwith brown sugar and soy sauce, mix well and let the sugar caramelize.
2. Add chicken and cook for a minute. Flip chicken pieces and cook. Add 1 tbsp orange zest, salt, spring onion with greens and five spice powder and flip pieces again.
3. Add orange juice, cover and cook for 2-3 minutes.
4. Remove cover, flip chicken pieces and add pepper powder, orange marmalade and vinegar and mix well. Cover and cook for 15-20 minutes.
5. Serve hot garnished with orange zest.
