A unique recipe of sambhar made using buttermilk and boondi. If you haven’t heard of this one, it’s time to try it. It’s Yummy !

BUTTERMILK SAMBHAR

Ingredients

1 cup buttermilk
3-4 dried red chillies
1 tsp cumin seeds
1 tsp coriander seeds
6-7 black peppercorns
2 tsps poppy seeds
2 garlic cloves
½ cup grated fresh coconut
1 tbsp + 1 tsp oil
1½ tsps mustard seeds
15-18 curry leaves
10-12 shallots
Salt to taste
¼ tsp turmeric powder
½ cup boondi

Method

1. Combine dried red chillies, cumin seeds, coriander seeds, peppercorns, poppy seeds, garlic cloves and coconut in a grinder jar. Add little water and grind into a smooth paste.
2. Heat 1 tbsp oil in a non-stick pan. Add 1 tsp mustard seeds, 8-9 curry leaves and shallots and saute well.
3. Transfer ground paste into a bowl, add buttermilk and mix well. Add salt and turmeric powder and mix well.
4. Add buttermilk mixture to the pan, stir well and simmer till it comes to a boil.
5. Add boondi, stir to mix and simmer for 2 minutes.
6. Heat 1 tsp oil in another non-stick pan. Add remaining mustard seeds and remaining curry leaves, let the seeds splutter and add this tempering to the sambhar.
7. Serve hot.
