Puffed rice tossed in a spicy tadka and roasted to perfection.
BHADANG
Ingredients
4 cups puffed rice (kurmura)
2 tbsps oil
1 tbsp sliced garlic cloves
½ cup raw peanuts
A sprig of curry leaves
1 tsp red chilli powder
½ tsp dried mango powder (amchoor)
Salt to taste
Method
1. Heat oil in a non-stick pan. Add garlic and raw peanuts. Sauté on low heat for 5-6 minutes. Add curry leaves and sauté till fragrant on low heat.
2. Add red chilli powder, dried mango powder, salt and mix well. Sauté for a minute on low heat.
3. Add puffed rice and mix well. Sauté for 6-8 minutes on low heat. Switch off the heat. Set aside to cool down.
4. Transfer bhadang in an airtight container.
5. Serve as required.
