Persian Kabab With Saffron Rice:
Ingredients:
Boneless chicken (cubes) 500 gm
Onion (grated) 4 tbsp
Salt as taste
Lemon juice 1 tbsp
Yogurt 2 tbsp
Black pepper powder 1 ½ tsp
Saffron 2 pinches
Turmeric 2 pinches
Olive oil 2 tbsp
Skewers as required
Tomato (grilled) for serving
Parsley as required
For The Rice:
Rice (boiled) 2 cup
Saffron ½ tsp
Butter 4 tbsp
Chicken stock ¾ cup
Method:
Marinate boneless chicken cubes with all the above ingredients for about 2-3 hours. Then place it in skewers and bake or grill until golden brown.
For saffron rice, heat butter add boiled rice and chicken stock. Mix well, cover and cook. Meanwhile, dissolve saffron in water and add in the rice. In the end place it in a dish and serve with Persian kabab, parsley and grilled tomatoes.
Lemon Ginger Lemonade:
Ingredients:
Lemon juice ½ cup
Ginger juice 2 tbsp
Black salt 2 pinches
Sugar ¾ cup
Ice as required
Method:
In a blender, blend all the ingredients and serve.
Persian Potato And Chicken Salad:
Ingredients:
Potato (boiled and cubed) 2 kg
Peas (boiled) ¾ cup
Chicken (boiled) ½ cup
Dill ½ bunch
Egg (boiled) as required
Cream cheese 2 tbsp
Black pepper powder 1 tsp
Lemon juice 4 tbsp
Mayonnaise 6 tbsp
Olive oil 2 tbsp
Salt as required
Green onion (chopped) 4 tbsp
Radish for garnish
Ingredients:
In a bowl mix mayonnaise, cream cheese, olive oil, lemon juice, salt and black pepper. Then add boiled, cubed potato, boiled peas, boiled chicken, boiled egg and dill. In the end garnish with green onion and radish.
