Banana chocolate muffins with oatmeal:
Ingredients
Flour 180gm
Baking powder 4gm
Baking soda 6gm
Salt 6gm
Ginger powder ½ tsp
Cinnamon powder 1 tsp
Nutmeg powder ¼ tsp
Cardamom powder ¼ tsp
Cloves powder ¼ tsp
Granulated sugar 150gm
Butter melted 78gm
Yogurt 60ml
Eggs 2
Bananas mashed 3- 4
Vanilla 5ml
Oatmeal ¼ cup
Chopped chocolate ½ cup
Instructions
Preheat oven to 375f. Add cupcake papers on to muffin tin mash your bananas in a small bowl. If they aren’t ripe enough bake on a sheet at 350f or 170 c for about 10 minutes or microwave for 2 mins
sift flour, baking soda, baking powder, salt, and all spices into a medium sized bowl. Whisk together then set aside.
mash peeled bananas in a large bowl.
add melted butter, yogurt, vanilla, sugar, and eggs to the mashed bananas and mix until incorporated.
add the sifted dry ingredients and mix until combined.
add oatmeal, chopped chocolate and walnuts at last and just fold the batter.
use an ice cream scoop or a tablespoon to transfer the batter filling each paper.
sprinkle some chopped chococlate on top and bake for 5 minutes at 375f (180c) then reduce oven temp to 350f (160c)and continue baking for another 18 minutes.
Chicken Cream Cheese Salad:
Chicken Breast boiled 1
Capsicum 2
Onion medium 2
Mayonnaise 3 tbsp
Pine Apple chopped 3 tbsp
Tetra pack Cream 2 tbsp
Cream cheese ½ cup
Yogurt 2 tbsp
White pepper ½ tsp
Black pepper ½ tsp
Salt to taste
Direction
Boil the chicken breast with salt and pepper-drain the water and let it cool – Take a large bowl, Combine cream cheese, mayonnaise, Tetra pack Cream, yogurt, white and black pepper with salt Mix well.- Add in Chopped Chicken, sliced onion, pineapple and capsicum and mix well. – Allow to refrigerate for 1/2 an hours to let the flavors develop
– Serve Cold
Meatballs Enchiladas with Pink Sauce:
Ingredients For Marinara Sauce:
Olive Oil 2 tbsp
Onion chopped 2
Garlic chopped 1 tbsp
Tomatoes chopped 4
Salt ½tsp
Tomato ketchup ½ cup
White pepper 1 tsp
Brown sugar 1 tbsp
Soy sauce 1 tbsp
Vinegar 1 tbsp
Paprika powder ½ tsp
Dried oregano 1 tsp
Dried basil leaves 1 tsp
Red chili flakes 1 tsp
Ingredients for White Sauce:
Butter 3 tbsp
Garlic Cloves 2tbsp
Flour 3 tbsp
Water 1 cup
Milk 1 cup
Tetra pack Cream ½ cup
Green chillies 2
Fresh Basil 2 tbsp
Dried Oregano ½ tsp
Chicken Powder 1tsp
Salt and Black Pepper for seasoning
Other Ingredients:
Mozzarella and Cheddar cheese 1 cup
Small soft flour tortillas as required
Meatballs as required
Oil ½ cup
Directions for Marinara sauce:
-In a frying pan,add oil and garlic saute for a minute then add in onion and saute until translucent.-Add in chopped tomatoes,cook until tomatoes are soft.-Add tomato ketchup,brown sugar,soy sauce, dried oregano,dried basil leaves and red chili crushed and white pepper,black pepper cook until sauce thickens.
-Put the sauce in a blender and blend to make a paste.
Directions for white sauce:
Melt butter in a pan over medium heat, add in Garlic and saute.-Stir flour into butter and whisk for 1 minute over heat.
-Add Milk and water and whisk together. Cook over heat until it’s thick and bubbles up-Add in all spices and seasoning=Take off heat and add in Cream.
Assembling:
-Preheat oven at 200C
-in a pan, add 2 tbsp of oil and fry Meatballs, Add in 3 tbsp of marinara sauce and mix
=Fill tortillas with meat balls and marinara sauce above and roll each one then place in a greased 6 or 9 inches pyrex dish.
-Pour marinara mixture over enchiladas then cover with white sauce
-Add the cheese to top.
-Bake in oven for 20-23 minutes then broil for 3 minutes to brown the cheese.
