BAKED COCONUT
Ingredients
1½ cups scraped fresh coconut + for garnishing
⅓ cup coconut cream
100 gms butter
½ cup sugar
3 eggs
⅓ cup condensed milk
1 tsp lemon zest
3 tbsps refined flour
Method
1. Preheat oven at 180ºC.
2. Cream butter and sugar in a bowl till smooth and light.
3. Add eggs and mix well. Add scraped coconut and mix well. Add condensed milk and mix well. Add coconut cream and mix again.
4. Finely chop lemon zest and add. Mix well.
5. Sift refined flour into the bowl and mix well.
6. Pour batter into an ovenproof baking dish, put the dish in the preheated oven and bake for 25 minutes.
7. Serve warm garnished with scraped coconut.
