A classic dish that is loved by many, well why not? Aloo can be flavoured with anything and this gravy in particular is just too perfect with the spices blending together brilliantly. Tastes fabulous with delicious hot luchis.

ALOO TARKARI

Ingredients

3 large potatoes, peeled and cut into ½ inch pieces
2 tbsps mustard oil
1½ tsps panch phoran
2 dried red chillies
½ tsp turmeric powder
½ tsp red chilli powder
½ tsp cumin powder
Salt to taste
½ tsp sugar

Method

1. Heat mustard oil in a non-stick pan, add panch phoran and let the seeds splutter. Break the dried red chillies and add them to the pan. Add the potatoes and sauté well.
2. Add turmeric powder, sauté and cook for 3-4 minutes. Add red chilli powder, cumin powder, and sauté well. Cook for 2-3 minutes.
3. Add salt, sugar and 2 cups of water, mix well. Cover and cook till the potatoes are completely cooked.
4. Serve hot.
