Potatoes and cauliflower cooked with flavourful spices. A simple yet comforting dish right there.
ALOO GOBHI
Ingredients
3 medium potatoes (aloo), peeled
1 small cauliflower (gobhi), separated into medium florets
1½ tablespoons oil
1 teaspoon cumin seeds (jeera)
1 inch ginger, cut into thin strips
2 green chillies, slit
¼ teaspoon turmeric powder
1 medium onion, finely chopped
1 teaspoon red chilli powder
1½ teaspoons coriander powder
Salt to taste
1 medium tomato, finely chopped
1 tablespoon chopped fresh coriander leaves + for garnishing
Method
1. Heat oil in a non-stick pan. Add cumin seeds and when it changes colour, add half of ginger strips and green chillies and sauté.
2. Add turmeric powder and onion sauté till onion turns translucent.
3. Cut potatoes into ½ inch pieces.
4. Add chilli powder and coriander powder to sautéed onion and sauté for 1 minute. Add potato pieces and toss. Add salt, cover and cook on medium heat for 1-2 minutes.
5. Add cauliflower florets, tomato and coriander leaves, toss, cover, reduce heat and cook for 20-25 minutes, sprinkling some water 1-2 times in between.
6. Serve hot garnished with remaining ginger strips and some coriander leaves.
