Achari fish karahi :

Ingredients

Fish cubes 500 gm
Oil ½ cup
Ginger & garlic paste 1tbsp
Tomato puree 1 cup
Yogurt ½ cup
Salt as required
Red chili crushed 1tsp
Turmeric powder ½ tsp
Mustard seeds 1tsp
Fennel crushed 1tsp
Coriander crushed 1tsp
Dried gingercrushed 1tsp
Onion seeds 1tsp
Green chili 2 – 3
Fresh coriander for garnish
Ginger julienne for garnish
METHOD
Oil garam ker kay lehsan or adrak ka paste sauté ker len. Phir haldi or tamam masalay dal ker bhoon len phir tomato puree or dahi dal ker masala achi tarhan bhoon len phir fish dal ker 5 se 7 minutes tak pakean jab fish gal jae to hari mirchen, dhania or adrak dal ker 1 minute tak taiz anch per karahi ko bhoon len. Phir dhania or adrak dal ker serve Karen.

Afghani chicken biryani :

Ingredients

Chicken with bone 750 gm
Rice 500 gm
Oil ½ cup
Garlic paste 1 tbsp
Green chili paste 1 tbsp
Onion paste 1 cup
Yogurt ½ cup
Plum 8 to 10
Salt as required
Black pepper powder 1 tsp
Black pepper crushed 1 tsp
Chicken powder 1 tbsp
Clarified butter 3 -4 tbsp
Coriander chopped for garnish
Green chili big julienne for garnish
METHOD
Oil garam ker kay lehsan ka paste sauté ker len phir chicken dal ker fry ker len ab hari mirch ka paste, piyaz ka paste or dahi dal ker achi tarhan bhoon len phir tamam masalay or aloo bukharay dal ker itna pakaen kay oil or masala alag alag hojae phir rice ubal ker gravy per dalen or rice per ghee dal ker dum per chor den. Jab biryani tayyar hojae to hara chaniya or mirchen dal ker serve keren.

Haryali chicken kabab :

Ingredients

Chicken boneless 1 cup
Ginger & garlic paste 1 tbsp
Green chili small 1 -2
Mint 2 tbsp
Coriander fresh 2 tbsp
Soya 1 tbsp
Fenugreek 2tbsp
Salt as required
White pepper 1tsp
Cumin crushed 1tsp
Coriander crushed 1 tsp
All spice ½ tsp
Bread slices 1 – 2
Oil for frying
METHOD
Ek bowl men bead slices pani men bhogo ker or nichor ker dalen phir chicken or tamam ajza dal ker achi tarhan mix Karen or phir chopper men dal ker chop ker len. Phir mixture ek tray men nikal ker achi tarhan hath ki madad se mal len phir kabab ki shape bana ker 15 minutes kay liye fridge men rakh len. Ab karahi men oil garam ker kay halki aanch per kabab fry ker len jab golden color ajae to nikal ker serve Karen.
