These Rawa Medu Vada make for a perfect breakfast!
RAWA MEDU VADA
Ingredients
1½ cups semolina (rawa)
¾ cup yogurt
Salt to taste
1 tsp cumin seeds
1-2 green chillies, chopped
2 tbsps freshly chopped coriander leaves
12-14 curry leaves, chopped
2 tbsps chopped fresh coconut
Oil for greasing + for deep frying
Green coconut chutney to serve
Method
1. In a large bowl, add semolina, yogurt, salt, cumin seeds, green chillies, chopped coriander, curry leaves, coconut, and mix well. Set aside for 10-15 minutes.
2. Heat sufficient oil in a kadai, meanwhile grease your palms with oil and take a portion of the mixture and shape it into a ball, flatten it and make a hole in the centre.
3. Drop the medu vada into the hot oil and deep fry till golden and crisp. Drain on an absorbent paper.
4. Serve hot with coconut chutney.
