A very popular kind of street style dosa recipe that is absolutely mouth-watering.
SET DOSA
Ingredients
2 cups parboiled rice (ukda chawal), soaked for 6-8 hours
½ cup split skinless black gram (dhuli urad dal), soaked with 1 tsp fenugreek seeds (methi dana) for 6-8 hours
½ cup pressed rice (poha), soaked for 6-8 hours
Salt to taste
Oil for drizzling
Coconut chutney to serve
Sambhar to serve
Method
1. Put soaked parboiled rice along with the soaked water in a grinder jar, add soaked split skinless black gram and fenugreek seeds and soaked pressed rice. Add salt, and grind till a smooth batter is formed.
2. Transfer the batter in a bowl, set aside to ferment for 6-8 hours.
3. For each dosa, pour a ladleful of batter onto the tawa, but do not spread it. The batter will set in a thick round. Drizzle a little oil all around the dosa and cook for 1-2 minutes on each side.
4. Arrange the set dosas on a sevring plate and serve hot with coconut chutney and sambhar.
