A nutritious and filling Poha recipe with numerous veggies making this a delicious breakfast recipe.
VEGETABLE POHA
Ingredients
2 cups pressed rice (poha)
1 small potato, cut into small cubes
1 small carrot, cut into small cubes
¼ cup corn kernels, boiled
¼ cup green peas, boiled
1 tbsp oil
1 tsp mustard seeds
6-7 curry leaves
1 green chilli, chopped
1 medium onion, finely chopped
1 small tomato, chopped
Salt to taste

¼ cup corn kernels, boiled
¼ cup green peas, boiled
½ tsp turmeric powder
2 tbsps freshly chopped coriander leaves
Lemon wedges for serving
Sev for garnishing
Coriander sprig for garnish
Method
1. Wash and drain poha, set aside.
2. Heat oil in a non-stick pan. Add mustard seeds and let them splutter. Add curry leaves, chillies and onions, sauté till onions are translucent.
3. Add tomatoes and salt, cook till tomatoes are pulpy. Add potatoes and carrots, mix well and cook for 2-3 minutes.
4. Add turmeric and mix well. Add poha, sweet corn kernels and green peas, mix well and sprinkle 2-3 tbsps water and adjust seasoning. Cover and cook for 2-3 minutes.
5. Add chopped coriander, mix well and take it off the heat and transfer to a serving plate.
6. Garnish with sev, coriander sprig and serve hot with lemon wedge.
