  • 4 large eggs
  • 2 tablespoons milk
  • 2 tablespoons butter or oil
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped (optional)
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon cumin powder
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

Step 1: Prepare the Egg Mixture

  • In a bowl, crack the eggs and whisk them together with milk, salt, and red chili powder.
  • Set aside while preparing the other ingredients.

Step 2: Cook the Aromatics

  • Heat butter or oil in a non-stick skillet over medium heat.
  • Sauté the chopped onion until translucent, about 2–3 minutes.
  • Add the green chili, turmeric powder, and cumin powder. Stir well and cook for another minute.

Step 3: Scramble the Eggs

  • Reduce the heat to low and pour the whisked egg mixture into the skillet.
  • Gently stir the eggs with a spatula, moving them around the pan until they start to set.
  • Cook for 3–4 minutes, stirring occasionally, until the eggs are cooked through but still soft.

Step 4: Garnish and Serve

  • Turn off the heat and sprinkle fresh cilantro over the scrambled eggs.
  • Serve hot with your choice of bread or as a filling in a wrap or sandwich.
