Scrumptious puris made using brown kidney beans.
RAJMA PURI
Ingredients
1½ cups whole wheat flour
½ cup boiled and mashed kidney beans (rajma)
1 tsp Tata Sampann Garam Masala
½ tsp turmeric powder
½ tsp red chilli powder
¼ tsp coriander powder
¼ tsp cumin powder
Salt to taste
¼ tsp carom seeds (ajwain)
½ tbsp ghee
2 tsps oil + for greasing + for deep frying
Method
1. In a parat, add whole wheat flour, rajma, Tata Sampann Garam Masala, turmeric powder, red chilli powder, coriander powder, cumin powder, and salt. Add ajwain, ghee and mix well.
2. Add sufficient water and knead to stiff dough. Drizzle 2 tsps oil and knead again. Set aside for 10-15 minutes.
3. Take a portion of the dough and shape it into a ball. Lightly grease with oil and roll it into a small disc.
4. Heat sufficient oil in a kadai, deep the puris till they puff up, drain on an absorbent paper.
5. Serve hot with any sabzi.
