Sweet and indulgent laddoos made using Rajgira.
RAJGIRA LADDOO
Ingredients
¾ cup chopped jaggery
2 cups puffed amaranth (rajgira)
½ cup crushed roasted peanuts
¼ tsp green cardamom powder
Method
1. Heat a non-stick pan, add jaggery and little water. Mix well. Cook on low heat for 1-2 minutes till jaggery melts completely. Add rajgira and mix well.
2. Add peanuts and green cardamom powder. Mix well and cook on low heat for 2 minutes.
3. Grease palms with little water, take a portion of the mixture and shape into medium sized laddoos.
4. Transfer laddoos in a serving plate.
5. Serve immediately or store in an airtight container.
