A delightful starter – prawns mixed with onions, green chilli sauce, refined flour and deep fried
PRAWN BHAJIA
Ingredients
15-20 medium prawns, chopped roughly
Oil for deep-frying
2 large onions
1 green chilli
2 spring onions with greens
1 tbsp green chilli sauce
Salt to taste
5-6 ice cubes
2 tbsps refined flour (maida)
Red chilli sauce, for drizzling
A few black sesame seeds, for sprinkling
Method
1. Heat sufficient oil in a kadai.
2. Roughly slice onions and put into a bowl. Finely chop green chilli and add to the bowl. Roughly slice spring onions with greens and add to the same bowl. Add prawns, green chilli sauce, salt and ice cubes and mix well.
3. Add refined flour and mix well. Add some 2 tbsps chilled water and mx.
4. Discard ice cubes. Pick up little mixture with your fingertips and put into hot oil and deep fry till crisp. Drain on absorbent paper.
5. Transfer onto a serving plate, drizzle red chilli sauce, black sesame seeds and serve immediately.
