An easy recipe to make delicious and flavourful Pina Colada cupcakes.

PINA COLADA CUPCAKES

Ingredients

Cupcakes
4 tbsps crushed pineapple
½ cup pineapple juice
6 tbsps butter, room temperature
¾ cup castor sugar
3 egg whites
6 tbsps sour cream
1¼ cups refined flour (maida)
2 tsps baking powder
Frosting
¾ cup butter, room temperature
2 cups powdered sugar
2 tbsps sour cream
2 tbsps crushed pineapple
2 tbsps vegetable shortening, room temperature
Pineapple pieces for garnish

Method

1. Preheat oven at 180̊ C.
2. In a bowl, cream together butter and castor sugar till light. Add egg whites and beat well. Add sour cream and beat again. Add crushed pineapple and pineapple juice and beat well.
3. Add flour and baking powder and mix well to avoid lumps. Transfer the batter in a piping bag.
4. Pipe prepared batter into individual cupcake moulds filling ¾. Bake for 15-20 minutes. Remove from oven, allow to cool slightly and de-mould. Set aside to cool completely.
5. To make the frosting, in a bowl, cream together butter and powdered sugar till light. Add sour cream and pineapple and beat till well combined. Add shortening and mix well. Fill the frosting in a piping bag.
6. Pipe out the frosting on the cupcakes, garnish with pineapple pieces and serve.
