Pastry puff dough stuffed with spicy paneer chilli mixture and baked till perfection. A must try !
PANEER CHILLI PUFFS – (Serves – 4)
Ingredients
150 grams cottage cheese (paneer), cut into small pieces
2 green chillies, diagonally sliced
1 medium green capsicum, cut into cubes
250 grams puff pastry dough
1 tablespoon oil + for greasing
1 medium onion, cut into small cubes
1 tablespoon finely chopped garlic
1 tablespoon soy sauce
1 cup vegetable stock
1 tablespoon cornflour slurry
Crushed black peppercorns to taste
Salt to taste
1 tablespoon finely chopped spring onion greens
Butter for brushing
White sesame seeds (safed til) for sprinkling
Method
1. Heat oil in a non-stick pan. Add onion and sauté till translucent. Add garlic and mix.
2. Add green chillies and capsicum, mix and cook for a minute. Add soy sauce, mix well and cook for a minute.
3. Add vegetable stock and slurry, mix well and bring to a boil. Add crushed peppercorns and salt and mix.
4. Add cottage cheese, mix well and cook till the mixture thickens. Add spring onion greens and mix well. Remove from heat and set aside.
5. Preheat oven to 180º C. Grease a baking tray with some oil.
6. Roll out puff pastry dough into a large sheet. Discard edges and cut into squares.
7. Place a spoonful of cottage cheese mixture in the centre of each square, bring the edges over to shape into puffs.
8. Place the puffs on the greased tray, brush with some butter and sprinkle some sesame seeds on top.
9. Place the tray in the preheated oven and bake for 15-20 minutes.
10. Serve hot with sweet chilli sauce.
