Coconut custard squares:
Ingredients
Coconut powder 1 cup
Hot water 1 cup
Milk 1 cup
Corn flour 1 tbsp
Sugar 6 tbsp
Cardamom powder 1 tsp
Method
In a pan put coconut powder, milk, corn flour, sugar and cardamom powder, mix well, put on stove, cook stirring all the time until mixture forms a ball in the center of the pan, grease a pan, put this mixture in the greased tray, spread well and leave it to set for 1 hour, cut into squares.
Ingredients for Batter
Flour 2 tbsp
Desiccated coconut 2 tbsp
Corn flour 4 tbsp
Baking powder 2 tsp
Water to make batter
Method
In a bowl mix flour, corn flour, baking powder, mix well, add in water and make batter, now dip the cut squares in this batter and deep fry, remove squares and immediately roll into desiccated coconut and serve.
Chapli Burger:
Ingredients:
Chapli kabab 4
Burger buns 4
Oil ½ cup
Cheese (sliced) 4
Green chutney ½ cup
Salad leaves 4
Tomatoes (sliced) 4
Onion rings 4
Method:
In a pan heat oil and fry chapli kabab. Then toast the burger buns on both sides. Now add green chutney on it, salad leaves, chapli kabab, cheese sliced, tomatoes sliced and onion rings. Cover with the other half and serve hot.
Chicken Bukhara Masala:
Ingredients
Chicken boneless cubes ½ kg
Red chili powder 1 tsp
Salt 1 tsp
All spice 1 tsp
Corn flour 1 tbsp
Turmeric ¼ tsp
Green chilies 2 chopped
Orange red color a pinch
Onion chopped 4 tbsp
Lemon juice 2 tbsp
Method
Marinate chicken cubes with all the above ingredients, leave it for 30 mins, then deep fry.
Ingredients for Gravy
Oil ¼ cup
Onion chopped 1 cup
Tomato 1 chopped
Salt ½ tsp
Red chili powder ½ tsp
All spice ½ tsp
Cashew paste 1 tsp
Fenugreek 1 tsp
Coriander 2 tsp
Turmeric ¼ tsp
Method
Heat oil in a pan, add chopped onion, fry for 2 mins, add tomato, salt, turmeric, chili powder, allspice powder,, cashew nut paste with ¼ cup water and fry well, add in it fried chicken boties with kasuri methi, coriander leaves, mix well , serve with nan.
Sikandari:
Ingredients
Boneless fish cubes ½ kg
Carom seeds ½ tsp
Ginger garlic paste 1 tsp
Salt 1 tsp
Black pepper ½ tsp
Red chili powder 1 tsp
Lemon juice 2 tbsp
Turmeric ½ tsp
Chaat masala ½ tsp
Flour 4 tbsp
Water ½ cup
Method
In a bowl mix together ginger garlic paste, salt, chili powder, ajwain, turmeric, chat masala, flour and lemon juice, add 2 tbsp water and form it into a thick paste, add to it fish cubes, leave it for a while, deep fry, serve fish with tamarind chatni and fries.
