Chicken Tikka Fried Rice:
Ingredients:
Chicken boneless ½ kg
Salt 1-1/2 tsp
Ginger garlic paste 1 tbsp
Lemon juice 2 tbsp
Yogurt ½ cup
Red chilies 1-1/2 tsp
Oil 4 tbsp
Wooden stick as required
Ingredients for Rice:
Chopped onion 1
Crushed garlic 1 tsp
Green chilies 2-3
Boiled peas ¾ cup
Soya sauce 1 tsp
Chopped green onion 2
Chopped green coriander 4 tbsp
Lemon juice 2 tbsp
Chopped carrot ½ cup
Boiled rice 2-1/2 cup
Oil ½ cup
• Marinate chicken with all ingredients.
• Pierce chicken with wooden sticks.
• Heat on grilled pan.
• For rice, heat oil, add chopped onion, ginger and green chilies fry well.
• Add chicken pieces, boiled peas and carrot and mix well.
• Add boiled rice and mix again.
• Then, add soya sauce, lemon juice, chopped green chilies and chopped green coriander.
• Remove from dish and serve with chicken stick.
Behari Chicken Qorma:
Ingredients
Chicken 750 gm
Crushed fried onion ½ cup
Ginger garlic paste 1 tbsp
Salt 1- ½ tsp
Red chili powder 1- ½ tsp
Turmeric ¼ tsp
Crushed coriander 1 tbsp
Clarified butter ¾ cup
Yogurt 1 Cup
All spice Mix 1 tbsp
Crushed poppy seed 1 tbsp
Crushed coconut 1 tbsp
Green cardamom 6-8
Screwpine water few drops
Finely chopped ginger 2 tbsp
Boiled eggs 2-3
All spice powder ½ tsp
Method:
• Heat clarified butter in a pan and fry chicken, when the chicken’s color changes place it separately.
• Now in same clarified butter, fry ginger garlic paste, salt, red chili, turmeric, coriander and whole all spice.
• Add yogurt and cook.
• Now add fried chicken and cook further.
• Add poppy seed, crushed coconut, crushed whole spices, fried crushed onions, green cardamom and screw pine water, add ½ cup water and let simmer.
• When the dish gets ready, garnishes with boiled eggs and finely chopped ginger.
