Chicken cheese stuffed paratha :
Ingredients:
Chicken mince 1 cup
Chadder cheese grated 1 cup
Dough 2 cup
Red chili powder 1 tbsp
Onion chopped 1 medium
Green chili chopped 2
Green coriander chopped 3 tbsp
Oil ¼ cup
Salt 1 tsp
Turmeric 1 tsp
Kasoori fenugreek 1 tsp
Method
In a bowl add chicken mince, onion, cheddar cheese ,green chili, salt, green coriander, turmeric, red chili and kasoori fenugreek then mix well. Roll the dough and make rotis. Now spread the chicken mixture and onion slices and place the second tortilla and seal the corner. After this heat the oil and fry from both sides and serve.
Barbeque chicken handi:
Ingredients:
Chicken boneless 500 grams
Salt to taste
Ginger, garlic paste 2 tbsp
Lemon juice 1 tbsp
Crushed red chili 1 tsp
Red chili powder 1 tsp
Hot spices powder 1 tsp
Black pepper powder 1 tsp
Yellow food colour ¼ tsp
Oil 4 tbsp
Onion chopped 1
Green chili chopped 5
Cumin powder 1 tsp
Coriander powder 1 tsp
Almond, pistachio powder (crushed) 1 tbsp
Tomato puree 6
Cream 2 tbsp
Chicken stock ½ cup
Fresh coriander (crushed) 2 tbsp
Butter 1 tbsp
Method:
In a bowl marinate chicken boneless with salt, ginger garlic paste, lemon juice, crushed red chili, all spice powder, black pepper powder, yellow food color and oil for about half an hour in the fridge.
Now heat oil in a handi add onion, green chili and ginger garlic paste. Sauté well.
Then add tomato puree, salt, red chili powder, cumin powder and coriander powder. Cook for about 3-4 minutes. Now add the marinated chicken, chicken stock, almond, pistachio powder, butter and cream. Cook well. In the end add cream and serve hot with fresh coriander.
Thai coconut chicken soup :
Ingredients:
Chicken boneless 1 cup
Fish sauce 2 tbsp
Ginger 2 tbsp
Lemon juice 2 tbsp
Coconut milk 1 tin
Salt 1 tsp
Mushroom slice 1 cup
Green onion slice 2
Green coriander (chopped) 2tbsp
Carrot slice 1
Green peas ½ cup
Water 1-1/2 liter
Method:
Boil water first. Add fish sauce, lemon juice, ginger, salt and green peas. Cook for about 5 minutes. Now add chicken and cook for another 2 minutes.
Then add mushroom, coconut milk, green onion, carrot and green coriander. Cook for 2 minutes and serve hot.
