Brown bread cubes tempered with mild spices along with onion and potato to make this delicious healthy upma.
BROWN BREAD UPMA
Ingredients
5-6 brown bread slices
2 tablespoons oil
1 teaspoon mustard seeds
¾ teaspoon cumin seeds (jeera)
2 sprigs curry leaves
1 medium onion, finely chopped
1 green chilli, chopped
1 green chilli, slit
1 medium potato, peeled and cut into small cubes
Salt to taste
¼ teaspoon turmeric powder
1 teaspoon lemon juice
1 teaspoon chopped fresh coriander leaves
Fresh coriander sprig for garnishing
Method
1. Heat oil in a non-stick pan. Add mustard seeds and sauté till the seeds splutter. Add cumin seeds and curry leaves and sauté till leaves crackle.
2. Add onions and sauté till it turns translucent. Add chopped and slit green chillies, potatoes and mix.
3. Add some water, salt and turmeric powder, mix well, cover and cook till the potatoes turn soft.
4. Cut bread slices into small cubes, add to the pan and toss well. Add some water, mix and let it get heated through.
5. Switch off heat, add lemon juice and coriander leaves and mix well.
6. Garnish with coriander sprig and serve hot.
