BOONDI KI SABZI
Ingredients
250 grams salted boondi
1 tablespoon oil
½ teaspoon cumin seeds (jeera)
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
¼ teaspoon asafoetida
Salt to taste
3-4 spring onion bulbs, chopped
2 tablespoons chopped spring onion greens
1 tablespoon chopped fresh coriander leaves
Fresh coriander sprigs for garnishing
Method
1. Heat oil in a non-stick pan. Add cumin seeds, turmeric powder, chilli powder, asafoetida, salt and spring onion bulbs, mix and sauté for 1-2 minutes.
2. Add spring onion greens, boondi and little water, mix well and cook for 2-3 minutes. Add coriander leaves and mix well.
3. Garnish with coriander sprigs and serve hot.
