Healthy alternative for this road side favorite, packed with vegetables and a tangy achari mayo making it fit for kids and adults both.

ALOO MAYO FRANKIE

Ingredients

1 large potato, boiled and peeled
2 tbsps + 1 tsp Nutralite Classic Spread
4 tbsps Nutralite Achari Mayo + for drizzling
½ medium onion
4 tbsps boiled sweet corn
3 tbsps blanched fresh green peas
Salt to taste
4 ready-made whole wheat rotis
½ cabbage, shredded
1 medium carrot, cut into thin strips
Micro greens for garnish

Method

1. Heat 2 tbsps Nutralite Classic Spread in a non-stick pan, finely chop onion and add to the pan and sauté till lightly softened.
2. Add sweet corn and fresh green peas and mix well. Cook for 3-4 minutes.
3. Grate potato, add to the corn-green peas mixture and sauté well. Cook for 2-3 minutes
4. Add salt and mix well. Cook for 1-2 minutes and take the pan off the heat.
5. To make each frankie, heat a roti on both sides on a non-stick tawa, take it off the heat and place on the worktop. Spread 1 tbsp of Nutralite Achari Mayo on it evenly.
6. Place some shredded cabbage, some carrot strips and drizzle a little Nutralite Achari Mayo in top. Place some potato mixture over the vegetables and roll.
7. Heat 1 tsp Nutralite Classic Spread in a non-stick tawa, place the rolls on it and cook rotating the rolls till evenly cooked on all sides. Take them off the tawa and halve them diagonally.
8. Arrange them on a serving platter, garnish with micro greens and serve hot.
