A street style egg special which involves a spicy egg omelette sandwiched between pavs and cooked till crisp like a toast.
ANDA PAV TOAST
Ingredients
8 eggs
4 pavs
Salt to taste
4 tsps oil
4 tbsps chopped onion + to serve
4 tbsps chopped tomato
3-4 green chillies, chopped
4 tsps chopped fresh coriander leaves
1 tsp Tata Sampann Chilli Powder
1 tsp garam masala powder
Butter for applying
Tomato ketchup to serve
Method
1. Break in the eggs and sprinkle salt, whisk well using a fork.
2. To make for one portion, heat 1 tsp oil in a non-stick tawa, pour a portion of the whisked eggs and sprinkle 1 tbsp chopped onion, 1 tbsp chopped tomatoes, a little chopped green chillies and 1 tsp chopped coriander and sprinkle ¼ tsp Tata Sampann Chilli Powder and ¼ tsp garam masala powder and cook the eggs for 30 seconds.
3. Slice a pav in half without cutting through, place on the eggs mixture and press it gently. Cook for 1-2 minutes, flip and fold the sides of the omelette and press it again.
4. Fold the pas in half and apply butter on top, flip and apply butter on the other side and press using a masher till the pav turns crisp. Cut in half and transfer on to a serving plate.
5. Serve hot with chopped onion and tomato ketchup.
