Dandan noodles:

Ingredients

Nuggets 1packet
Oil ¼ cup
Egg noodles boiled 1 packet
Crushed garlic 2 tbsp
Ginger minced 1 tbsp
Soya sauce 3 tbsp
Brown sugar 2 tbsp
Sambal oleak 1 tbsp
Red chili garlic sauce 2 tbsp
Corn flour 2 tbsp
Water ¼ cup
Capsicum 1 sliced
Carrot 1 julienne
Green onions 2
Dried thai chilies 6 to 8
Salt & black pepper 1 tsp each

Method

Marinate chicken with salt & pepper, fry in ¼ cup oil for 10 mins then remove. In the same wok add chopped ginger garlic, fry for 2 mins, add soya sauce, stock, brown sugar, chili garlic sauce, sambal oleak, cook till boiling, thicken with corn flour paste, stir in chicken, veggies and noodles, mix well and serve immediately.

Crispy honey chicken:

Ingredients to marinate
Boneless chicken 400 gm cubes
Light soya sauce 1 tbsp
White pepper ¼ tsp
Salt ½ tsp
Corn flour 1 tbsp
Garlic crushed 1 tbsp
Green onion finely minced 2 tbsp
Oil for frying
Ingredients for batter
Flour 4 tbsp
Corn flour 4 tbsp
Egg 1
Baking powder ¼ tsp
Baking soda ¼ tsp
Water as required
Ingredients for sauce
Stock ½ cup
Honey 4 tbsp
White vinegar ¼ cup
Light soya sauce 3 tbsp
Sugar 2 tbsp
Corn flour 2 tbsp
Water ¼ cup
Method
Marinate chicken with light soya sauce, white pepper, salt and 1 tbsp corn flour. Now make batter with all the given ingredients under batter, keep in fridge for 2 hours, dip marinated chicken in batter and deep fry until golden.
Method for sauceMix all the ingredients for sauce together in a sauce pan and thicken with corn flour paste, it should not be very thick, coat the chicken with this sauce. Heat 2 tbsp oil, fry crushed garlic and pour on top of chicken with sauce, garnish with spring onion.

Salt & pepper prawns:

Ingredients

Prawns with tail ½ kg
Crushed black pepper 1tsp
Crushed red pepper 1tsp
Salt 1 tsp
Rice flour 5 tbsp
Oil 1 cup + 2 tbsp
Egg white 1

Ingredients for sauce

Brown sugar 2 tbsp
Vinegar 1 tbsp
Garlic crushed 1 tsp
Red chilies chopped 1 to 2
Coriander leaves 1 tbsp
Lemon juice 2 tbsp
Crushed red pepper ½ tsp
Salt ¼ tsp

Method for prawns

Marinate prawns with all the given ingredients and deep fry till crisp, remove and keep aside.

Method for sauce

Mix sugar and vinegar in a pan, cook till sugar dissolves, cool, add all the remaining ingredients, and serve with prawns.
