  1. Dear Jamie, what could I use instead of pasta with these lovely veggies? I’m asking bc I can no longer eat pasta dishes since I had my gastric surgery in 2015… tried gluten free/lentil pasta/basically all the substitutes but nothing works… I wondered if rice or couscous could work here?
    Pasta is the only food I really really miss, all the other foods I have to omit don’t bother me, but I do miss my pasta dishes… 😢😢😢

  4. Made this for dinner today. Delicious!! Switched out the water for veggie broth and used vegan mozzarella cheese instead of cottage cheese. We love it! Thanks for this recipe!

  5. I cook something similar but add a glass of white wine to the veggies and let the alcohol evaporate, add a stock cube and substitute ricotta instead of the cottage cheese to amp up the flavour. Oh and a grating of parmesan would not go amiss!
