Tortilla pieces baked into a shape of a cup, topped with whipped cream and chopped mangoes.
TORTILLA MANGO CUPS
4 tortillas, roasted lightly
1 large mango, peeled, seeded and cut into small cubes
Butter for brushing
Cinnamon-castor sugar mixture for sprinkling
1 cup whipped cream
Dark chocolate chips for garnishing
1. Preheat oven to 180º C.
2. Brush both sides of tortillas with some butter and sprinkle some cinnamon-sugar mixture on them.
3. Cut into 4 pieces and line a cupcake mould tray with them. Put tray in preheated oven and bake till the crust turns golden brown. Remove from oven, cool and demould.
4. Mix together whipped cream and mangoes in a bowl. Spoon portions in the baked tortillas cups.
5. Garnish with chocolate chips and serve immediately.
