Ingredients

  • 4 boneless, skinless chicken breasts (sliced into strips)
  • 2 tablespoons butter
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 200g mushrooms (sliced)
  • 1/2 cup chicken broth
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley (chopped, for garnish)
  • Cooked pasta, rice, or mashed potatoes (for serving)

Instructions

Step 1: Cook the Chicken

  • In a large pan, heat 1 tablespoon of butter over medium heat.
  • Add the chicken strips and cook until golden brown and cooked through, about 7-8 minutes. Remove the chicken from the pan and set aside.

Step 2: Sauté the Vegetables

  • In the same pan, add the remaining butter and sauté the chopped onion until soft and translucent, about 3 minutes.
  • Add the garlic and sliced mushrooms, cooking for another 5 minutes, until the mushrooms are tender.

Step 3: Prepare the Sauce

  • Pour in the chicken broth and bring to a simmer. Let it reduce slightly, about 3 minutes.
  • Stir in the sour cream, Dijon mustard, and paprika. Cook for another 2 minutes, allowing the sauce to thicken.

Step 4: Combine Chicken and Sauce

  • Return the cooked chicken to the pan, mixing well to coat with the creamy sauce. Season with salt and pepper to taste.
  • Let the chicken simmer in the sauce for 5 minutes, ensuring it’s heated through.

Step 5: Serve

  • Serve the Chicken Stroganoff over cooked pasta, rice, or mashed potatoes.
  • Garnish with fresh chopped parsley and enjoy!
