Born in Manila, Philippines in 1982, Bruce Ricketts inherited his passion for food from his Filipino mother and British father. Inspired by his family’s love for cooking and his exposure to various cuisines, Ricketts set out on a path to explore the culinary arts.

Ricketts pursued his formal culinary education at the California Culinary Academy in San Francisco, where he honed his skills and learned the fundamentals of French and Italian cuisines. During this time, he worked at some of San Francisco’s finest restaurants, including Gary Danko and Michael Mina. These experiences provided Ricketts with a strong foundation in classic culinary techniques, which would later serve as a launching pad for his innovative culinary creations.

Returning to the Philippines:

After completing his culinary training in the United States, Ricketts felt a deep connection to his Filipino roots and decided to return to the Philippines. In 2008, he opened his first restaurant, Sensei Sushi, a small and intimate sushi bar in Makati City. Sensei Sushi quickly gained popularity among food enthusiasts, showcasing Ricketts’ skill in crafting exquisite sushi rolls and introducing unique flavor combinations.

Culinary Style and Philosophy:

Chef Bruce Ricketts’ culinary style is a fusion of his formal training in Western techniques and his exploration of local Filipino ingredients. He is known for his meticulous attention to detail, balance of flavors, and ability to elevate traditional Filipino dishes to new heights. Ricketts embraces the concept of “modern Filipino cuisine,” combining traditional cooking methods with contemporary presentation and innovative ingredient combinations.

In 2015, Ricketts opened Ooma, a casual and vibrant Japanese restaurant that combines the traditional flavors of Japan with a modern twist. Continuing his culinary exploration, Ricketts unveiled his fourth venture, La Chinesca, in 2017. La Chinesca pays homage to the vibrant street food culture of Mexico, with a focus on tacos and other Mexican delights. Ricketts’ interpretation of Mexican cuisine showcases his ability to masterfully adapt flavors and techniques from different culinary traditions.
