INGREDIENTS:

2 tbsp coconut oil
1 cup dry pitted dates, soaked into purified water for at least 1 hour
1/4 cup oats
1/2 cup pumpkin seeds, soaked into purified water for at least 1 hour
2 tbsp almond butter
1 tbsp coconut flour
1 tbsp almond powder
1 tbsp raw cacao powder
cacao powder, for coating

 

Method:
Drain the dates and pumpkin seeds, and add them into the food processor together with the coconut oil and almond butter. Now process to obtain a fine puree. Then add the rest of the ingredients and pulse to incorporate. Shape little balls using your palms and add them onto a plate with cacao powder. Refrigerate at least 1 hour before serving.
