Directions

Step 1

Cook the soba noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process.

Cut the tofu into cubes and the kabocha squash into thin slices. Set aside.

Heat sesame oil in a pan over medium heat. Add minced garlic and ginger, sautéing until fragrant.

Add tofu cubes to the pan, cooking until golden on all sides.

Remove and set aside.

In the same pan, add kabocha slices and cook until tender. Add soy sauce and yuzu juice, stirring well.
