Wash the plums thoroughly and remove all seeds. Place the plums into a deep cooking pot with water and cook over medium heat for about 20 minutes until the fruit becomes soft and starts breaking apart naturally.

Use a spoon or potato masher to crush the softened plums into a thick mixture. Stir continuously to create a smoother consistency and prevent the fruit from sticking to the bottom of the pot.

Add sugar, lemon juice, and salt into the plum mixture. Stir well until the sugar dissolves completely. Reduce the heat to low and continue cooking slowly for 35 minutes while stirring regularly.

Check the texture by placing a small amount on a plate.

If it holds shape after cooling, the plumbrillo is ready.

Cook a few extra minutes if the mixture remains too thin.

Remove the pot from heat and allow the plumbrillo to cool slightly. Transfer the mixture into clean containers and refrigerate after cooling completely. Serve with bread, crackers, desserts, or cheese platters.
