Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain and set aside.

Chop the kabocha into small cubes, removing the seeds. Cut the tofu into bite-sized pieces.

In a pot, heat sesame oil over medium heat. Add chopped onion, garlic, and ginger, and sauté until fragrant.

Add the kabocha cubes to the pot and stir for a few minutes. Pour in the dashi and bring to a boil.
