Directions

Step 1

Cut the kabocha into bite-sized pieces, removing the seeds.

Step 2

Cube the tofu and set aside.

Step 3

In a pot, combine dashi, soy sauce, mirin, sugar, and salt. Bring to a boil.

Add kabocha to the pot and simmer for 10 minutes.

Add tofu and simmer for another 10 minutes until kabocha is tender.

Stir in grated ginger and sansho pepper. Cook for 5 more minutes.
