Directions

Step 1

Peel and dice the kabocha into small cubes. Set aside.

Step 2

In a pot, heat sesame oil over medium heat.

Step 3

Add diced kabocha and sauté for 5 minutes.

Step 4

Add dashi stock to the pot and bring to a boil. Reduce heat to simmer.

Step 5

Rinse rice under cold water. Add to the pot and cook for 15 minutes.

Step 6

Add tofu cubes and soy sauce. Stir gently and simmer for another 10 minutes.

Step 7

Finely chop shiso and green onion. Stir into zosui just before serving. Enjoy!
