Directions

Step 1

Rinse the rice under cold water until the water runs clear. Cook the rice with 4 cups of water in a rice cooker.

While the rice is cooking, cut the kabocha into bite-sized cubes, removing the seeds but keeping the skin intact.

In a large pan, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.

Add tofu cubes to the pan and cook until they are lightly browned on all sides.

Add kabocha cubes to the tofu.
