Directions

Peel the kabocha and cut it into bite-sized pieces. Slice the radish and carrot into rounds.

In a large pot, bring the dashi to a boil. Add the kabocha, radish, and carrot, and simmer for 15 minutes.

Cut the tofu into cubes and add to the pot. Continue to simmer for another 10 minutes.

Stir in the soy sauce, mirin, and salt. Add the ginger piece for additional flavor.

Gently add the shiso leaves to the pot, cooking for an additional 5 minutes.

Remove the ginger before serving. Ladle the oden into bowls and serve hot.
