Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain and set aside.

Step 2

In a saucepan, combine rice, dashi, and water. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes.

Step 3

Meanwhile, cut the tofu into cubes. Heat sesame oil in a pan over medium heat and fry tofu until golden. Set aside.

Step 4

In the same pan, add ginger and soy sauce. Stir in matcha powder and mix well. Return tofu to the pan, making sure it’s coated evenly.

Step 5

Once rice is cooked, fluff with a fork and mix in the matcha tofu mixture.

Step 6

Garnish with shiso leaves and a pinch of salt. Serve hot and enjoy.
